Pork Tenderloin with Oven Roasted Turnips

Serves 4
Prep Time: 4-8 hours marinade + 15 minutes
Cook Time: 40-45 minutes + 5 minutes stand time

Ingredients:


1/3 C olive oil
2 cloves garlic, minced
2 t dried, crushed rosemary leaves
2 t dried, crushed thyme leaves
½ t salt
¼ t pepper
1 ½ lb pork tenderloin
2 ½ lbs turnips (or other approved vegetables)

Directions:


Mix together oil, garlic, rosemary, thyme, salt and pepper in a large ziplock bag.
Add pork tenderloin.
Allow to marinate for 4 - 8 hours.
Preheat oven to 375°
Cut turnips into wedges.
Remove tenderloin from marinade and place in roasting pan.
Place turnip wedges in bag with marinade, zip and toss with marinade until coated.
Arrange around meat in pan.
Roast for 35 - 40 minutes or until meat thermometer registers 155° and juices run clear.
Stir turnips after 20 minutes.
Broil on top rack of oven 5 minutes to brown.
Let stand for 5 minutes before slicing.
