Asian Cucumber Salad

Serves 2 - 4
Prep Time: 10 minutes before

Ingredients:

¼ C vinegar
¼ C soy sauce
1 t sesame oil (use canola oil for IP diet)
1 packet Truvia sweetener
1 English cucumber, peeled and thinly sliced
1-3 green onions, thinly sliced

Directions:

Mix vinegar, soy sauce, oil, and sweetener in small mixing bowl.
Peel and slice cucumber.
Add to dressing mixture.
Slice green onions.
Add to bowl.
Toss until combined.
Serve immediately.
